Vicky's Love Pops

Ingredients:

30 regular marshmallows (or about 4 cups miniature marshmallows)
3 Tablespoons butter
3 Tablespoons peanut butter
1 12 once bag of Cocoa Goodness Love Grown Granola

Topping:
12 ounce semi-sweet chocolate chips
2 Tablespoons shortening
Sprinkles for decoration

Directions:

In a double boiler, melt the marshmallows and butter (*see below for microwave method). While the marshmallows are melting, place an open bag of Cocoa Goodness onto wax paper and gently roll with a rolling pin to break up any large pieces.

Once the marshmallow mixture is melted, stir in the peanut butter. When it is blended, pour over the Cocoa Goodness granola and knead the mix together with your hands (rub a thin coating of butter onto your hands to ease in mixing). Once it is mixed well, make a tight ball about the size of a walnut (periodically you will need to reapply a small amount of butter onto your hands). You will be able to make about 24 balls or pops. If you want a pop instead of a ball, insert a sucker stick half way into each ball, being certain to have each ball tightly rolled. At this point they may be left as is, or you may cover them with a chocolate coating.

Chocolate Coating:
Melt 12 ounces of semi-sweet chocolate chips with 2 Tablespoons of shortening in the microwave on high for 30 seconds, stir, and then repeat at 15 second intervals, until the mixture is melted. Carefully dip each granola pop into the chocolate mixture and then place the end of the stick into Styrofoam or something similar that will hold the granola pops upright. (I have a 2 X 4 board that I drilled holes into; I cover it with wax paper and place each pop into a hole). If you are making balls and not pops, you will need to only place them onto waxed paper until they have dried. Sprinkle with your favorite decoration and let dry.

Pan Method:
Once the mixture of granola, marshmallows, butter and peanut butter have been kneaded together, you can place it into a greased, 8 X 8 inch pan. With the back of a large, buttered spoon, press the mixture firmly into the prepared pan.

Melt 6 ounces of semi-sweet chocolate and 1 Tablespoon of shortening in the microwave on high for 30 seconds, stir, and then repeat at 15 second intervals, until the mixture is fully melted. Pour the melted chocolate on top of the granola/marshmallow mix and let cool. Cut into bars.

*Microwave Method for Melting Marshmallow Mixture:
Microwave butter in large, non metal bowl on HIGH for 45 seconds or until melted. Add marshmallows and toss to coat. Microwave 1 ½ minutes or until marshmallows are completely melted and mixture is well blended, stirring after 45 seconds. Add the peanut butter and mix well.
