My Dad's 'Mashers'
-4 Yukon Gold Potatoes (or Russet Potatoes), washed and cut into chunks
-1/2 stick Butter
-1 cup Half and Half
-3 cloves Galic, minced (optional--or can be substituted for Wasabi to make Wasabi Mashers)
-Fresh Parsley (optional)
Place potatoes in a large pot and cover with cold water. Bring water to a boil and reduce temperature so water remains at a rolling boil. Cook until potatoes are tender and can be easily pierced with a fork (about 40 minutes). Once potatoes are almost cooked, in a small sauce pan combine butter, half and half and garlic over medium heat--stirring regularly. Cook until butter has melted. Drain water from potatoes and (in the same pot) using a beater, add half and half, butter, and garlic mixture. Beat to desired consistency. Beat in sea salt, cracked pepper and fresh parsley to taste. Serve warm. Enjoy!
These are my dad’s creation. My family is very healthy, but we still believe in moderation. These ‘mashers’ are not intended to be eaten everyday, but are a great treat and truly make Thanksgiving dinner. The garlic can be substituted for wasabi (making a great side for ahi tuna) or can be optional. Either way, these ‘mashers’ are the best compliment to a Turkey Dinner!
