Healthy Scramble

Serves 1


o    1 clove minced garlic
o    2 eggs (or 1 whole egg and 2 egg whites)
o    1 cup variety of leafy green veggies, chopped (i.e. spinach, kale, swiss chard, collards etc.)
o    small handful of fresh mushrooms (i.e. shiitake, button, baby portobellos etc.)
o    1-2 tbsp. olive oil
o    fresh herbs (minced) (dry herbs work too)


o    Rinse greens and then cut/tear them into smaller (bite-size) pieces
o    Thinly slice mushrooms
o    In a small bowl beat eggs and add fresh (or dry) herbs
o    Heat 1 tsp. oil and then add mushrooms and garlic. Sauté until mushrooms are browned (about 5 minutes). Remove mushrooms and set aside. In the same pan add greens and a little bit of water to steam them (about 2 minutes). Set aside with mushrooms. Remove any excess water from pan. Return pan to heat and add other tsp. of oil. Pour in eggs and let set for about 1 minute. Then gently fold in edges and add mushrooms and greens. Cook until eggs are no longer runny. Serve warm.
