Alex’s Sweet Potato Fries


Alex LOVES his sweet potato fries…and the best part is that this is a great recipe that is also healthy. Sweet potatoes are packed-full of good nutrients (especially Vitamin A). Alex likes this as a side to his BBQ grilled chicken sandwiches or even as something to munch on through the day. So delicious. So good. If you desire something a little sweeter…you can always sprinkle with a little brown sugar for the last 5 minutes, or if you like spicy add a little cayenne!

Alex's Sweet Potato Fries

Ingredients:

  • 3 yams/sweet potatoes, washed and cut into 1/2'' sticks
  • 3-5 tablespoons olive oil (drizzled evenly over)
  • garlic powder
  • sea salt
  • fresh ground pepper
  • dried parsley
  • Italian seasonings
  • Directions:

    Preheat oven to 450*. On a cookie sheet (with edges) drizzle the olive oil over the potatoes and then evenly sprinkle a light layer of each spice. "Dance up" (Alex's term) the fries--as in toss them gently with your hands. Place on the middle rack, stir often (every 5-10 minutes) to prevent burning. Cook for about 40minutes, or until fries are baked to desired consistency. ENJOY!
